The Yellowbelly story is simple. Michael and his cofounders, Barry and Eric, came up with the idea of Yellowbelly based on what they felt was missing from the dining landscape. They wanted something delicious, quick and affordable. They wanted natural ingredients and food that left them feeling great. They wanted something they'd be proud to serve their friends and families.

Yellowbelly opened in 2012 in their hometown, Vail, Colorado, with the simple goal to serve fun, healthful & delicious food. Since then, Yellowbelly has expanded to Boulder, Colorado and has plans to open a restaurant in Denver.

Not only is Michael a chicken mogul, but he competed on the US Ski Team, is a coach and cyclist, as well as an artist and designer. He stays connected throughout the Boulder community and signed on Julian Kyer, professional cyclist, to be a Yellowbelly ambassador. Learn more about Julian's perspective on food & Yellowbelly here:
